Supermarkets Industry Terminology

A/B Testing

A controlled experiment comparing two variants (A and B) to determine which performs better on a metric like conversion, basket size, or click-through for ads, emails, shelf tags, or app features.

We A/B tested two weekly ad headlines to see which drove higher click-throughs; The team A/B tested shelf tags with and without unit price to measure impact on conversion; We ran an A/B test on curbside pickup time slots to reduce late arrivals

Average Basket Size (ABS)

The average dollar value or number of items per transaction. Indicates shopper spending per visit and is a key driver of sales growth alongside traffic.

Our ABS increased from $34 to $37 after expanding private label; The promo lifted traffic but not ABS; Let’s segment ABS by loyalty tier to find high-value shoppers

Backroom

The non-customer area of a store used for receiving, staging, and storing inventory prior to shelf replenishment.

Move excess paper towels to the backroom to clear the endcap; Backroom accuracy is off, causing OSA gaps; We need better backroom-to-shelf replenishment discipline

BOPIS (Buy Online, Pick Up In Store)

An omnichannel fulfillment method where customers purchase online and collect their order at the store, often via curbside or service counters.

BOPIS orders spike on weekends; We added designated BOPIS parking to speed pickup; Substitution rules for BOPIS need tighter controls

Category Management

A strategic process to manage product categories as business units, optimizing assortment, pricing, placement, and promotions based on shopper insights and performance.

The dairy category manager rebalanced facings to boost premium yogurt; We use shopper data to inform category roles; Our supplier is co-developing the baking category plan

Center Store

The middle aisles of a supermarket featuring shelf-stable and non-perishable items like canned goods, cereals, and cleaning supplies.

We’re shrinking center store to expand fresh; Private label growth is strongest in center-store staples; The category reset will reflow the center store aisles

Cold Chain

The temperature-controlled supply chain for perishable goods (produce, dairy, meat, frozen), maintained from supplier through distribution to store to preserve quality and safety.

A break in the cold chain caused produce shrink; We monitor temperature loggers from DC to store; Frozen endcaps need better cold chain integrity during resets

COGS (Cost of Goods Sold)

The direct costs of products sold (purchase cost, freight, allowances netted), used to compute gross margin and profitability.

Rising COGS on beef is compressing margin; Private label lowers COGS vs national brands; We reconcile COGS variance after inventory counts

CRM (Customer Relationship Management)

Systems and processes that manage customer data, segmentation, communication, and personalization across email, app, and loyalty channels.

CRM data powers personalized digital coupons; We integrated POS and CRM for unified shopper profiles; CRM triggers win-back offers to lapsing shoppers

Cross-Docking

A logistics practice where inbound goods are transferred directly to outbound transport with minimal storage, improving freshness and lowering handling costs.

Produce is cross-docked to cut dwell time; The DC cross-docks DSD-like shipments for smaller stores; Cross-docking reduced shrink on chilled dairy

DSD (Direct Store Delivery)

A distribution model where suppliers deliver directly to stores and often handle merchandising, common for beverages, snacks, bread, and magazines.

Bread and soda arrive via DSD and are merchandised by the vendor; DSD scan credits reconcile at POS; Tighten DSD delivery windows before holidays

EDLP (Everyday Low Price)

A pricing strategy that maintains consistently low prices instead of frequent promotional swings, aiming to build price trust and reduce complexity.

We’re shifting from high-low to EDLP on KVIs; EDLP builds price trust for staples; Competitors’ EDLP is eroding our value perception

EDI (Electronic Data Interchange)

Standardized electronic exchange of business documents (purchase orders, invoices, ASNs) between retailers and suppliers, replacing paper-based processes.

We send 850 POs via EDI; EDI 810 invoice mismatches trigger chargebacks; The new supplier isn’t EDI-ready yet

Endcap

The display space at the end of aisles, highly visible and often used for promotions or seasonal features to drive impulse purchases.

The pasta endcap lifted sales 3x; Vendors bid for Q4 endcap slots; Keep endcaps clean and fully faced for peak impact

Facing

The number of product units shown front-facing on the shelf; more facings typically improve visibility and reduce out-of-stocks.

Increase facings on the best-selling cereal; Planogram specifies four facings per SKU; Poor facing discipline reduces OSA

FIFO (First-In, First-Out)

An inventory rotation method where older stock is sold first to minimize spoilage and ensure freshness for dated products.

Use FIFO rotation in dairy to cut spoilage; Train night crew on FIFO standards; FIFO audits flagged date code issues

Fill Rate

The percentage of customer or store demand fulfilled from available inventory; measured at supplier-to-DC, DC-to-store, and shelf levels.

DC case fill rate dropped to 94%; Shelf fill rate is lagging despite good DC fill; We set vendor SLAs for 98% fill rate

Foot Traffic

The number of customers entering a store within a given period; a key driver of sales along with conversion and basket size.

Weather depressed Saturday foot traffic; Mobile push drove afternoon traffic; Track traffic vs ABS to parse sales lifts

GMROI (Gross Margin Return on Inventory)

A productivity metric showing gross margin dollars earned for every dollar invested in inventory, typically calculated as gross margin divided by average inventory cost.

GMROI improved after pruning slow-moving SKUs; We target 250% GMROI in produce; Compare GMROI by brand to optimize assortment

Gondola

The freestanding, modular shelving units forming store aisles, adjustable for shelf height, depth, and accessories.

Reset the cereal gondolas per the new POG; Gondola height affects sightlines; Add clip strips to the gondola for trial sizes

Gross Margin

Sales minus COGS, expressed in dollars or as a percentage; measures profitability before operating expenses.

EDLP narrowed gross margin but increased volume; Track gross margin by category and channel; Mix shift to private label lifted gross margin

Inventory Shrink

The loss of inventory due to theft, spoilage, damage, administrative errors, or vendor discrepancies, measured as a percent of sales.

Shrink spiked in meat due to theft and spoilage; Cycle counts reveal scanning errors causing shrink; Improve date checks to cut shrink

JIT (Just-in-Time Inventory)

An inventory strategy that minimizes on-hand stock by timing deliveries close to demand, reducing carrying costs but increasing supply risk.

JIT reduced backroom clutter but increased OSA risk; We need JIT exceptions before storms; JIT works better with reliable lead times

KVI (Key Value Items)

High-visibility items that strongly shape customers’ price perception; retailers track and price these aggressively.

Milk and bananas are KVIs we price-match; Monitor competitors weekly on KVI list; Protect KVI gaps during promos

Last Mile

The final step of delivery or pickup from store or fulfillment center to the customer, a major cost and service driver for e-commerce.

Last-mile costs erode e-grocery margins; We’re piloting gig drivers for last mile; Heat maps optimize last-mile zones

Loyalty Program

A customer membership system that tracks purchases and rewards behavior with discounts, points, or exclusive offers, enabling personalization and tracking.

Loyalty members get personalized weekly offers; Points expiration lifted redemption; Tiered loyalty increased retention

Markdown

A deliberate price reduction to accelerate sell-through of slow-moving, seasonal, or perishable items and minimize losses.

Take a 30% markdown on overstocked seasonal candy; Automated markdowns reduced waste in produce; Markdown cadence impacts price perception

MFC (Micro-Fulfillment Center)

A compact, often automated facility (inside or near a store) designed to fulfill online grocery orders more efficiently than manual in-aisle picking.

The MFC doubled order picking productivity; We route BOPIS orders to the MFC during peaks; Fresh picking stays on the store floor, ambient in the MFC

NPS (Net Promoter Score)

A customer loyalty metric based on the likelihood to recommend; calculated from promoters minus detractors, used to track experience quality.

NPS dropped after checkout changes; We target +60 NPS for curbside; Text surveys capture post-visit NPS

Omnichannel

An integrated retail approach where customers can browse, buy, and receive service seamlessly across physical stores, websites, and apps.

Unified carts enable true omnichannel; Omnichannel promos sync store, app, and web pricing; Inventory visibility is key to omnichannel OSA

OSA (On-Shelf Availability)

The percentage of time the right product is available on the shelf for customers; critical for sales and shopper satisfaction.

Computer vision audits OSA in cereal; Substitute rules hide OSA pain in e-grocery; OSA KPIs tie to manager bonuses

Planogram (POG)

A schematic that dictates product placement, facings, and shelf layout to optimize visibility, flow, and sales in each category.

Implement the new snack POG next week; POG compliance raised category sales; Adjust POGs using heat map insights

PLU (Price Look-Up Code)

Four- or five-digit codes used at checkout to identify loose produce and bulk items for accurate pricing and inventory tracking.

Cashiers must memorize common PLUs like 4011 bananas; Organic PLUs start with 9; Wrong PLUs can inflate shrink

Point of Sale (POS)

The checkout system (hardware and software) that scans items, applies promotions, takes payment, and records transactions for analytics.

POS data feeds daily sales dashboards; We upgraded POS scanners for faster checkout; POS outages hurt conversion and NPS

Private Label

Retailer-owned brands that compete with national brands, often at lower price points, supporting differentiation and margin.

Private label pasta is gaining share vs national brands; Expand premium private label in frozen; Private label boosts margin and loyalty

Promo Cadence

The planned timing and frequency of promotions for a category or item, balancing traffic, margin, and shopper expectations.

Our 8-week promo cadence is too frequent; Align promo cadence across store and app; Test longer cadence on high-loyalty categories

Rain Check

A voucher allowing customers to receive a sale price later when an advertised item is out of stock.

Offer a rain check for the sold-out coffee; Digital rain checks reduce fraud; Policy limits rain checks on limited-time offers

Reset (Category Reset)

A comprehensive remerchandising of a category, changing layouts, facings, and sometimes assortments to reflect strategy and trends.

Schedule the beverage reset overnight; The reset adds new facings for energy drinks; Communicate reset maps to store teams

Safety Stock

Buffer inventory held to protect against demand spikes and supply delays, reducing out-of-stocks at the cost of higher carrying inventory.

Raise safety stock ahead of storms; Safety stock for KVIs is non-negotiable; Excess safety stock ties up working capital

Scan-Based Trading (SBT)

A model where suppliers retain ownership of inventory until it scans at POS, transferring sales and shrink risk differently than traditional buy-sell.

Magazines run on SBT, vendor owns shrink; SBT improves shelf availability for DSD items; Reconcile SBT scans weekly with vendors

SKU (Stock Keeping Unit)

A unique identifier for each distinct product and variation (size, flavor, pack) used for ordering, inventory, and analytics.

We carry 45,000 SKUs per supercenter; Rationalize SKUs to reduce complexity; New SKUs require POG and KVI review

Slotting Fee

A payment from suppliers to retailers for shelf space, introductions, or preferred placement, especially for new items or limited space categories.

The new salsa brand paid a slotting allowance for eye-level placement; Slotting fees vary by store cluster; Legal reviews govern slotting agreements

SNAP/WIC

U.S. government nutrition programs: SNAP provides food assistance via EBT; WIC supports women, infants, and children with specified eligible items.

Ensure SNAP EBT terminals are online; WIC-approved formula must be in stock; Train cashiers on SNAP and WIC tender rules

Spoilage

Loss of perishable goods due to decay, expiration, or damage, a key component of shrink in fresh departments.

Spoilage surged after the cooler failure; Markdown earlier to prevent spoilage; Track spoilage by department for root-cause analysis

TPR (Temporary Price Reduction)

A short-term discount off regular retail, often funded by manufacturers, used to drive volume without permanently changing price.

Run a two-week TPR on pasta sauce; TPRs stack with digital coupons; Track TPR lift vs baseline

Trade Spend

Manufacturers’ investment in promotions, discounts, and retailer programs (e.g., TPRs, displays, co-op ads) to drive sales and share.

Allocate trade spend to endcaps and TPRs; ROI on trade spend improved with better targeting; Track off-invoice vs bill-back trade spend

Turnover (Inventory Turn)

How many times inventory is sold and replenished over a period, typically COGS divided by average inventory; gauges inventory efficiency.

Produce turns weekly; Improve turns by pruning long-tail SKUs; Turns fell as safety stock rose

UPC (Universal Product Code)

A standardized barcode used in North America to identify products at POS, enabling scanning, pricing, and inventory tracking.

The scanner can’t read that UPC, key it in; New items need UPC assignment and verification; Map UPCs to SKUs in the item master

Vendor Managed Inventory (VMI)

A replenishment model where the supplier monitors inventory and generates orders to maintain agreed service levels at the retailer or DC.

The soda vendor runs VMI for our top stores; VMI improved OSA but needs better data; Set VMI KPIs for fill rate and freshness

Zone Pricing

Setting different prices by geographic area or store cluster to reflect local costs, competition, and demand, while managing price perception.

Milk is zone-priced higher in urban stores; Adjust zone pricing after competitor moves; Define KVI guardrails within each zone
